I don’t think it is possible to come up with a more Welsh recipe than this Trefaldwyn Blue Welsh Rarebit, we use homemade Bara Brith as the base, the sweetness, spices and dried fruits add the flavours of a traditional fruit chutney, we put this together with our fantastic local beer from Monty’s Brewery to create this awesome, rich tasting Rarebit.
This is a firm favourite, this delicious soufflé can be made well ahead of time, and popped in the oven as your guests arrive. The rich indulgent flavours are offset by the light and fluffy texture of the soufflé. For this recipe you can use ramekins, if you don’t have them, a deep Yorkshire pudding tin can be used just as easily.
We love making pizza at home, in the summer we make them in the garden in an Ooni Pizza oven (worth a look for a brilliant affordable way to cook pizza al-fresco) , in the winter set the oven to the highest temperature and it is till very very good!
